Sugarcane & molasses-based spirits is an abstract category for spirits distilled from one (or more) of the following: fermented sugarcane juice, fermented sugarcane syrup—which is sugarcane juice boiled down to a syrup for storage—or sugarcane molasses. Sugarcane molasses is the principle byproduct of refining cane sugar. Many—but not all—sugar cane spirits are aged in wood to some degree.
