Like any thoughtful pairing, this dinner cocktail recipe by Julia Momose can be adjusted to suit the meal at hand.
1. Fill a highball or Collins glass two-thirds full with ice. 2. Stir to chill the glass, then drain off any water. 3. Pour the tea, St-Germain and whiskey into the glass and stir gently to combine. 4. Pour soda water down the side of the glass so as to retain carbonation. 5. Add ice and top with a final splash of soda water. 6. Express the lemon peel, then discard. 7. Garnish with fresh bay leaf.
