The Eastside is a gin-based cocktail recipe that was created by George Delgado at Libation in New York City, New York. This variation was adapted from the book Steve The Bartender's Cocktail Guide by Steve Roennfeldt.
1. Add three cucumbers slices and mint leaves to a shaker. 2. Muddle gently for 5-7 seconds. 3. Add gin, lime juice, simple syrup, and cubed ice to shaker. 4. Shake for 10-20 seconds. 5. Fine strain into a cocktail glass.
Garnish with remaining cucumber slice and mint sprig.
